Hope you had a wonderful holiday season. Have you made your New Year's 
resolutions? Lots of folks decide now's a great time to lose a few pounds. 
But it's very hard to keep up the momentum when time is a factor. Keep 
reading for some great tips on making healthier choices--even when time counts. 

We'll also discuss ways to avoid clutter in your home. If you've made it 
your New Year's resolution to get more organized, this information will 
be especially helpful.

Healthier Eating Choices
========================

1. Save calories in your Combo: skip the super-sized, super fat meal and opt 
for a small order of fries and water instead. You'll get to satisfy your 
craving for french fries while saving well over 400 calories on the fries 
alone. A Diet Coke might save you calories, but the benefits of water far 
out weigh the destruction of yor kidneys from the soda!

2. Make your meal a little more healthy: choose the Chicken Nuggets or 
Grilled Chicken over a Big Mac or Whopper. You'll save calories, fat and 
maybe your life! Take off the top bun to save calories and carbohydrates.

3. Plan for your busy schedule and buy pre-cut, pre-washed veggies at the 
grocery store. The more raw vegetables you can work into your day, the 
better off you'll be. Cooking kills enzymes and destroys some fiber content. 
Enzymes are our life givers and our body does not produce them on its own. 
From the first day of our life, our given store of enzymes is constantly 
depleting. Enzymes could be the answer to the old "Where's the fountain 
of youth?" question. Eat more live (raw) foods and you can replenish your 
supply. Raw veggies also have fiber, a terrific weight-loss partner.

4. Nature made easy carrying pouches for food--grab a banana, an apple, 
a pear, a bunch of grapes. All easy to eat on the go.

5. Try new tastes. Visit your local health food store where you can find 
dried fruits made without chemicals, sugar and oils. Ever had a Black 
Mission Fig or a Deglet Noor or Medjool date? It's nature's candy and 
should be able to satisfy your craving for a candy bar. Don't eat too 
many dried fruits though--while super nutritious, they also contain 
concentrated calories. A little goes a long way.

Avoid Clutter
=============

1. Start with one room of your house, or one closet, or one drawer. Breaking 
it down into this one small task makes it all seem a lot less daunting.

2. Once in your room, closet or drawer, take 3 boxes or bags. One is for 
stuff to give away. One is for stuff that is not in its place (you will 
take to another location and put away) and the third is for trash.

3. Once you have cleared out all that does not belong in that room, closet 
or drawer, group the remaining items by relation. (For example, sewing 
items; extension cords; gift wrapping supplies; sweaters; etc.) Now box 
these grouped items in a clear plastic container. Label clearly for easy 
identification and stack neatly on shelves.

4. Cool idea; Stuff extra blankets into pillow cases and use as extra 
"pillows" to give a more decorative look to your bedroom!

5. Stop clutter as you walk into the door. Ever notice how every time you 
go out of the house, you always come back in with bags full of new stuff? 
Create a sorting system that starts at the front door. Throw junk mail away 
in a small trash can you keep near the door. Put bills in your bill-paying 
area. File all other mail right when you get it. Whatever you bring in, 
make a place for it immediately. Don't just set it down.

Greek Tofu "Tacos"
==================

Tofu? Puuhhleeze. Really, it's quite good. Tofu, made of soy beans, is a 
highly nutritious meat alternative. And this healthy meal or snack 
provides a high protein, lo-carb, raw-veggie alternative to fattening 
corn tacos filled with meat and cheese.

Change the flavoring and you have a Mexi-flavored feast.

1 carton extra-firm, lite tofu (found in the produce section)
2 medium yellow or red tomatoes, deseeded and cut in small pieces
1/2 red, yellow, orange or green bell pepper, deseeded and cut in 
small pieces
1/2 cucumber, deseeded and cut in small pieces
1/2 onion, cut in small pieces
1 clove garlic, minced
salt, pepper
basil
rosemary
oregano
olive oil
white wine vinegar
large romaine or red-leaf lettuce leaves, washed & separated

First, drain the tofu of excess water: lay the tofu block onto paper 
towels in a colander, with paper towels on top. Place a plate on top 
with a heavy glass on top of that. Let drain for several hours. 

Next cube your tofu into smallish chunks; combine with your prepared veggies, 
except for the lettuce. 

Add salt, pepper and herbs to taste. Toss all with oil and vinegar. This 
part is all up to your preference. Aproximately 1/3 cup oil and 1/2 cup 
vinegar. If mixture is too dry, add more. Careful not to make it to moist 
as it will run out the back of your "taco" leaf and be messier.

Chill and serve on the fold of the lettuce leaves like a taco!

Change the herbs to cumin, cayenne and oregano and you have a Mexican 
flavored treat. This is really great and a great way to try tofu!
